#scones are seriously one of my favorite things to bake! They are endlessly customizable (sweet potato w/ orange & cinnamon bark today,) really hard to mess up, and don't require an egg (which I never seem to have when I need one, even though we eat them like they're going out of style.) 🤔🤷♀️
What's your go-to "raid the cabinets and throw something together" recipe?
yesterday’s lunch is a perfect example of my go-to healthy & easy meal !! it is the meal that i always used to make for dinner when i first started this account. of course you can switch it up with different veggies or different types of potatoes, but zucchini is my fav vegetable and sweet potato is my fav type of potato !! with the protein source my favorite super easy choices are a turkey burger, chicken sausage, or a chicken burger like i had for this meal. these are all basically pre cooked options that just make life so much easier !! i especially recommend this aged white cheddar & caramelized onion chicken burger from costco ... it is literally amazing. 🙌🏻✔️🥰
zucchini: sauté chopped onion in avocado oil with some @tastefullysimpleinc garlic garlic seasoning or regular garlic powder. once the onions are starting to become soft and fragrant add in the zucchini. add some more seasonings and cook on medium to high heat in order to get that browning !! •
sweet potato: peel & cut the sweet potato into your desired shape. roast in the oven at 425. flip the sweet potatoes once they are starting to crisp up a little. i don’t have an exact time that i cook them for, i just continuously check and take them out when i think they’re done !! you can also broil them for a little at the end for extra crisp. 👍🏻
Our meal prepped lunches have been such a life saver this week! And bonus!!!! They taste good too. They took me about 30 minutes to cook the potatoes and chicken and about 1 minute to throw together! Using frozen veggies makes the prep even easier! I’ll switch it up next week so we don’t get bored with the same foods. Do you prep lunches? What do you put in them?
