Taco Tuesday 🌮 ⁣ ⁣ Isn’t it nice when a meal is naturally gluten free & you don’t have to make ANY changes or be “the awkward one”⁣ ⁣ Veggie taco in a corn tortilla with hot jalapeños & a big drizzle maple tahini! ⁣ ⁣ Tahini dressing is an obsession, it goes on EVERYTHING, amazing on chilli in the winter & on porridge on those emotional days when the PB runs out. My Israeli friends taught me how to make a proper tahini dressing - tahini, lemon juice & water.. simple & delicious! ⁣ ⁣ ⬆️ 📸 is from @chihuahuabyronbay where I worked the last month, I was lucky to eat this #vegan dream at work, everything locally sourced & made fresh on site 😍

Roger, Gemma and Jordina, have worked tirelessly this year, between cooking for La Bruguera guests and running Bar l'Escola in La Pera, renovating the ancient building in the main square in Púbol, choosing suppliers, designing menus, etc. We are over the moon that we have such a top-flight chef cooking walking distance from La Bruguera, and so pleased for our guests who can enjoy his gastronomic delights too. This is the biggest thing to happen in Púbol since Dalí - and arguably WAY tastier. Roger, Gemma and Jordina, have worked tirelessly this year, between cooking for La Bruguera guests and running Bar l'Escola in La Pera, renovating the ancient building in the main square in Púbol, choosing suppliers, designing menus, etc. We are over the moon that we have such a top-flight chef cooking walking distance from La Bruguera, and so pleased for our guests who can enjoy his gastronomic delights too. 🤶 100g lentils
🤶 200g premade stuffing
🤶 3 tbsp cranberry sauce
🤶 1 tsp mango chutney

🎅🏼 Split the squash and power boil it for 20mins. Scoop out half of the squash (I used this for soup)
🎅🏼 Cook 100g lentils per packet instructions.
🎅🏼 Mix the lentils, stuffing, sauce and chutney together and stuff the squash.
🎅🏼 Roast in the oven 180 for 30mins.

(serves 4)
Cakes:
1/2 cup all purpose flour
2 Tbsp cane sugar
3 Tbsp @unicornsuperfoods beauty blend
1/2 tsp baking powder
pinch of salt
1 chia/flax egg
1/2 tsp vanilla extract
1/4 cup coconut oil, melted
1/2 cup soy milk

Filling:
8 squares of dark chocolate
Raspberries

1. Prepare the chia egg by mixing 1 Tbsp chia seeds with 3 Tbsp water.
3. Combine the dry ingredients and whisk together.
4. Add in the wet ingredients and mix until you have a smooth batter.
5. Grease 4 ramekins or a muffin pan and preheat the oven to 350°F/175°C.
6. Place the ramekins in the oven and bake for about 15 minutes (this may vary from oven to oven - insert a toothpick in the sides until it comes out clean).
7. Remove from ramekin and immediately serve with fresh berries and powdered sugar.

Resep hari ini adalah veggie scrambled egg omelete! ⁣ ⁣ Meskipun masih pakai telur, gapapa yaa.. karena step by step menguranginya.. yang penting aku mulai tidak pakai daging disini..⁣ ⁣ Bahan yang dibutuhkan: ⁣ 2 telur, 1 sdm mentega, 1 sdm cream (opsional: untuk membuat omelete lebih lembut dan creamy), 1/4 cup sayur kale (atau apa saja boleh sesuai selera), lada hitam dan garam. ⁣ ⁣ Instruksi: ⁣ 1. Here we’ve got crispy baked pitta dressed as tortilla chips and a Greek homage to chilli (not to sound too pretentious!). A great way to hit up that store cupboard and enjoy the cheaper side of lamb. What’s your proudest midnight moment of culinary inspiration?

Ingredients
Serves 4
2 packs pita breads (flatbreads work well too)
500g lamb mince
2 tins butter beans (other beans such as kidney, pinto or black work well here. Try a combo!)
1 finely sliced white onion
1 finely chopped red onion
3 cloves garlic
1 tbsp tomato puree
1 block feta cheese
2 tsp cinnamon, allspice, smoked paprika and oregano
Big pinch of salt and pepper

To serve
Handful of roughly chopped mint
A couple of spoonfuls of yoghurt

Method
Preheat oven to 150C
Cut pita breads lengthways then roughly into triangles. Toss with olive oil, salt and smoked paprika. Bake on oven racks until crispy.
In a pan, on a medium heat, add olive oil, onions, garlic, cinnamon, allspice and remaining smoked paprika. Stir regularly to avoid burning. Once softened and fragrant remove from the pan.
Heat the pan up until hot and add the lamb mince and a big pinch of salt. Brown until crispy and golden. Add back onion mix and the tomato puree and cook for 5 minutes. Add butter beans with water, oregano and a good grind of black pepper. Cook until thick and unctuous. Test for seasoning and set aside.
Lay your pita nachos on a plate and carefully layer the lamb mix, yoghurt, crumbled feta, finely sliced red onions and fresh mint. Eat immediately; these don’t like to be left around!

Doing dinner properly @veganboi_! There is a huge misconception about “carbs” right now in the fitness and nutrition community. Everyone thinks that carbs make you fat, and there are several different fad diets (i.e. Keto and Paleo) that call for a very minute amount of carbs and high amounts of fats and proteins. People enjoy these diets because they experience some weight-loss at the beginning and they can eat some of their favorite foods, like bacon & eggs, steak, and cheese. These diets shun foods like potatoes, rice, beans, etc., because of the high carbohydrate content in those foods. 🍠 . Refined carbohydrates, like white flour and table sugar, are certainly associated with weight gain, but complex/whole carbohydrates, like rice, beans, bananas and sweet potatoes, are associated with weight LOSS. What separates human beings from lesser primates is our ability to consume starch. All successful populations of human beings throughout verifiable history received about 95% of their calories from some form of starch (see “The Starch Solution” by Dr. John McDougall): the Asians had rice, the American Indians had corn and squash, the Irish had potatoes, the Aztec had quinoa, the Hawaiians had poi… and they were healthy, trim peoples. In those times, it was only the wealthy who consumed heavy amounts of animal products, and they were the obese ones with atherosclerosis. 🤒 . Your brain runs on glucose and your muscles need glycogen to operate optimally. Most athletes understand the importance of protein, but many don’t understand how important carbohydrates are, especially post-workout! If you’re just chugging whey protein or cramming down steak and eggs when you get home from the gym, you’re not only harming your arteries, the planet and innocent animals, but you’re missing out on a TON of recovery. The power you need is in plants, not exploited, abused animals. Spicy Mexican Soup Nyoba resepnya vegetariannya Gordon Ramsay. Disesuaikan sana sini krn banyak bahan yg gak ada. Dried Chipotle diganti lombok merah besar. Harusnya bisa pake dried chili flakes. Tapi takut nanti kepedesan. Dan gak ada yg mau makan masakanku kalo kepedesan. Tomato puree diganti saos tomat, canned tomatoes diganti chopped fresh tomatoes, kidney beans diganti kacang ijo dan black split beans. Ditambah jamur kancing spy agak lebih ndaging. Lanchasire cheesenya diganti vegan cheese seadanya yg di chiller. Rasanya? Yaaah spicy mexican ala pasar minggu... Tomato salsanya, tinggal nyendok persediaan salsaku di kulkas. Tortillanya pake corn tortilla yg terlebih dahulu diolesin olive oil di sluruh permukaannya lalu ditaburi smoked paprika. Potong2 segitiga, lalu panggang 5 menit di api atas 175C. Siap disantap di udara mendung2 lengket abis ujan ini. Meatless monday = Postre plantbased 🌱 ✨Panqué de calabaza ✨ Este postre no tiene gluten (en caso de que sean sensibles o alérgicos, no tiene harinas refinadas, aceites ni mantequillas y no tiene lácteos). Ingredientes: 1 taza de harina de garbanzo @morama.mx 1/2 cda de polvo para hornear 1/2 cda de bicarbonato de sodio 1 cda de canela 1 cda de nuez moscada 1/4 de cda de jengibre en polvo 1/2 taza de crema de almendra sin azúcar 2/3 de taza de puré de calabaza natural 2 huevos o 2 cucharadas de "huevo" de linaza (2 cdas de linaza en 3 cdas de agua) 1/3 de taza de jarabe de maple natural) pueden intercambiar por stevia o azúcar de coco) 1 cda de vinagre de manzana 1 cda de extracto de vainilla 1/4 de cda de sal Nueces para decorar (yo usé semillas de hemp ricas en proteína vegetal) Procedimiento: 1. Precalentar el horno a 350°c. 1. Mezclar ingredientes secos en un bowl. 2. Mezclar ingredientes húmedos en otro bowl. 3. Añadir los ingredientes secos a los húmedos y formar una mezcla homogénea. 4. Vertir en un molde engrasado previamente. 5. Hornear durante 45 minutos. 6. Servir. Sugerencia: sirvan con un café o un te chai con un chorrito de leche de soya o almendra. Woo hoo! Another reason why Jess Cooks meals for kids are 100% guilt free! I do like to keep it local in the Jess Cooks kitchen.
