Many people believe that if you go overboard one day, you have to compensate the following day by seriously restricting yourself. The reality, though, is that's the last thing you should do!
Part of eating sustainably for life is breaking old habits. For many, one of the oldest habits is overindulging followed by extreme restricting and then back to overindulging.
Instead of drastically restricting yourself after a day of overeating, try to get right back to a normal day of eating. Recognize that it was just one day, and in the grand scheme of a few months or even a year, that’s hardly a blip on the radar.
Identify where you went off track and why, but don’t beat yourself up for it. Recognize it’s something that happens to all of us, and try to think of one way you can handle a similar situation better in the future.
Above all else, remember that we all have times where we go way off plan. That doesn’t make you a failure, that just makes you a human.
Indian feast! We had loadsss of veg to use up this weekend from the veg box and various people’s allotments so we made two curries- the @bosh.tv veggie korma and a vegetable masala, and Dan made some home made roti! With samosas from @alligator_wholefoods 🍛
The meal was inspired by my dad’s cooking, him and my stepmum eat mostly vegan and have found it easiest doing this by cooking mostly Indian food, and it’s always delish and wholesome! And a great way to het in lots of vegetables. What’s your favourite way to use up spare veg? 🥦
PLANT POWER 🌱🌱 With the rise of more sustainable eating and reduction of meat intake, here is a high plant protein dish packed full of nutrients and flavour!! Carrots and red peppers are my favourite veggies and full of nutrients like vitamin A and C and taste even better when roasted! But you can put whatever veggies you love into your recipe!
I used couscous as my grain because it is so easy to make and also filling..and you know I'm all about that easy life 🥳. I also used smoked tofu because it is a protein powerhouse and a great alternative to meat once you know how to cook it. I recommend using the @tofooco brand for a firmer tastier tofu (tastes kinda like smokey bacon to me😍) RECIPE: *Block of @tofooco smoked tofu
*Couscous of your choice (I used roast vegetable flavour)
*200g carrots cut into "fries"
*1 large red bell pepper cut in half
*Juice of lemon, salt & pepper to taste
Roast your veggies in the oven with a TBSP of rapeseed oil for 30mins @ 180. Meanwhile press excess moisture out of the tofu using kitchen towel. Cut into chunks and fry in a pan with some oil for 10mins. Prepare couscous as instructed (for packet add boiling water & leave for 5 mins)
Serve with some lemon juice for an extra zingy flavour!
I usually also serve this with some fresh spinach and a dollop of hummus 🤤🤤 This bowl contains an impressive 38g of protein!!! 💪💪💪

▪️Photo 2: taken in direct afternoon sunlight. As you can see, this photo is brighter overall, has lighter shadows, and has direct light cast upon the peaches and tomatoes.

And here’s how I used these goodies:
* Heirloom and cherry tomatoes 🍅 + (some of the) peaches 🍑 + basil + zucchini 🥒>> summer salad, tossed with extra virgin olive oil, balsamic vinegar, and vegan ricotta cheese
* Plums: rustic plum streusel cake (recipe coming later this week)!
* Remaining peaches 🍑 + blueberries: made the Peach Raspberry Crisp from the desserts chapter in my cookbook (subbed bluebs for raspberries)
* Blackberries: mashed them and mixed them into softened vegan vanilla ice cream yesterday because it was hot AF…highly recommend!

You know those really ripe bananas that you were about to throw away... they are perfect for banana bread! 💛🍞While I created this recipe for a dessert it also makes a fantastic breakfast! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍌All you have to do is combine: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 1/2 cup almond flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup oat flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 ripe bananas ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 eggs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2/3 cup honey ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp cinnamon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup almond butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup dark chocolate chips ⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍌Pour into a loaf pan, and top with more chocolate chips. Bake at 350F for about 60 minutes (you can check the middle with a toothpick to see if it's done). PS- baking this makes your house smell amazing.⠀⠀⠀⠀⠀⠀⠀⠀⠀

БУЛГУР С ЖАРЕНЫМИ ПОМИДОРАМИ
Как по мне, так булгур тут лишний. Мы со старшим сыном пришли к тому, что готовы питаться одними помидорами. Ну разве что менять апгрейд: масло, сметана, чеснок, травы.
Но это только неполная половина семьи. Остальные требуют углеводов. Наблатыкались в нутрициологии и пеняют мне, что еда должна быть сбалансированная.
Просили, пожалуйста, получайте, только, чур, "красная шапочка" всецело моя!
Рецепт простой, всего три действия:
1. Сварить булгур. На пачке пишут, что сначала его нужно обжарить на сливочном масле, но я избегаю этого этапа - лишние калории, будь они неладны!
2. На оливковом масле обжарить помидоры. Когда станут душистыми и мягкими добавить чеснок, травы, болгарский перец, немного посолить и поперчить и потомить под крышкой минут пять.
3. Смешать ингредиенты или просто выложить друг на друга.
PS. Есть и четвертый пункт - съесть немедленно, пока овощная заправка горячая.
