My heart belongs to veggies+ an oven. Roast any veggie and I will go crazy with joy 😋 so simple, so clean, not always fast but always worth it. It's nothing fancy just veg tossed in online oil, salt and pepper. Then spread out over a sheet pan and put into the oven at 450° F. Then I just dolloped some roasted red pepper hummus on top, and some plain black beans from a can (my favorite bean). - Also, is it just me, or can other people eat beans from a can totally plain and be super happy with it. Like sometimes I crave some plain black beans or chickpeas. Artichoke Hummus ❤️😋 Love finding new recipes that are compliant to the RESTART program. This one is delicious and so easy to make. Artichokes provide an excellent source of dietary fiber, magnesium and the trace mineral chromium. They also provide vitamin C, folic acid, biotin and manganese. And are a good source of vitamin A, potassium, and B vitamins; niacin, riboflavin, and thiamin. (Adapted from @myheartbeets) Ingredients: 1 can of artichoke hearts 1/2 cup organic tahini 1/4 cup lemon juice 3-5 garlic cloves, roughly chopped 1 tsp sea salt 3 tbsp extra virgin olive oil Paprika Instructions: 1. Drizzle artichokes with olive oil and bake at 350 for 25 minutes. 2. Add the artichokes to the rest of the ingredients into a blender and purée until smooth. 3. This meal was epic 🎺 I started with the the recipe from @geoffreyzakarian cook book #myperfectpantry #grilledlamb with worcestershire & #watercress (page 290) * I love lamb with mint. This recipe does not include mint. But I love to eat and live to love what I’m eating, so I alter recipes to suit my taste if need be. I placed fresh mint at the bottom of a glass pan covered with #oliveoil and placed the lamb chop on top . I let it sit while I prepared the rest of meal. * #cornonthecob topped with #butter #saltandpepper #parmesancheese * #baconwrappedscallops * #twicebakedpotatoes with #mushrooms and #spices * I placed the lamb chops on a simple but delicious bed of #homemade #hummus topped with the mouthwatering #geoffreyzakarian watercress sauce and #mintsauce on the side! Of all the hummus recipes I've tried, my fave has to be from @altonbrown. Creamy goodness! He doesn't mention this, but for extra creaminess, remove the skins by boiling the chickpeas in baking soda and water. About 1.5 tsp baking soda per can of beans, for about 3 to 5 minutes. You bought a hundred pound sack of garbanzo beans, kept it in the woodshed out behind the Moosewood Co-op. If you had some flour, you were set. Toast and hummus to keep you through the dark months. Some brined olives and you were living large. 
Of course, at 35° below that sack of beans became a brick. Roll yourself a Bull Durham and head out to the shed with an ax to get some beans. That’ll warm you up too. 
Our hummus toast today has a lot more going on. Tomato, red onion, kalamatas from Greece, a sprinkle of sunflower seeds and a drizzle of lemon tahini. Now we are rich with food.

. Wishing all my Chinese friends GONG XI FA CAI 🥳. . Veganuary for the Lazy Cook - Day 24 (2 Serves) . Breakfast - Chop 2 bananas and add 1 cup of berries, 1 cup of cherries, and 2 chopped oranges. Add 6 tablespoons of raw oats and a couple of handfuls of walnuts. . Lunch - 2 x hummus (see 26 June 2019 post) sandwiches on wholemeal bread with avocado, cucumber, olives, sun-dried tomatoes, baby spinach, and red onion. . Dinner for 2 - Seitan 👹😆🤪 . Use 1/2 of the ingredients from the following recipe: . https://cookingwithplants.com/recipe/gluten-free-seitan-roast/ . Lentils were chosen, but chickpeas or cannelini beans would have probably complemented the chickpea flour more. Added 1 tablespoon of nutritional yeast, 1/4 diced brown onion (instead of onion powder), and 2 cloves of minced garlic. Used wholemeal flour as a substitute for brown rice flour. The seitan had a nice texture and tasted good with plenty of chilli (or tomato) sauce. Serve with wedges and steamed broccoli and kai lan with garlic and chilli sauce. Breakfast -Blend 2 bananas, 2 cups of mixed berries, 1 cup of water, 1 cup of plant-based milk,  6 tablespoons of raw oats, 2 handfuls of almonds, 2 teaspoons of spirulina, and 2 teaspoons of maca powder

Lunch - Blend 6 tablespoons of leftover eggplant and red kidney bean curry, 6 tablespoons of hummus (see post from 6 June 2019), and 2 tablespoons of chopped coriander leaves. Ingredients

A)
125 grams cooked pasta
1/2 a handful of fresh basil leaves, chopped
1 teaspoon sun-dried tomatoes
1 teaspoon olives

B)
1/8 butternut pumpkin, peeled and cut into bite size pieces
1/2 small green capsicum, cut into bite size pieces
4 cup mushrooms, halved
1/2 brown onion, peeled and cut into bite size pieces
A few dashes onion powder
A few dashes garlic powder
A few dashes pepper
1 teaspoon lemon juice

C)
125 grams tofu, roughly chopped
1 1/2 tablespoons nutritional yeast 
1/4 cup plant-based milk
Juice from 1 lemon wedge
A dash of salt
.
D)
1 teaspoon lemon juice
1 clove of peeled and minced garlic
1/2 broccoli, cut into florets
.
Method
.
Mix B) and transfer to oven for 30 minutes @ 200 C.
.
Blend C).
.
For D), heat lemon juice and cook garlic until fragrant. Add broccoli and cook until dark green. Stir in A), B), and C). Serve with a fresh salad.
