Dip de aguacate con mascarpone y nachos horneados, excelente opción para una tarde familiar! 🌽🥑 Ingredientes: 2 raciones 2 cucharadas mascarpone 1 aguacate Zumo de medio limón 5 tomates cherry 1 pepinillo agridulce 1/2 cebolla morada 1 puntilla de guindilla 1 chorrito aceite de oliva 1 poco sal Pimientas molidas 4 fajitas Procedimiento: 10 minutos Precalentar el horno. Preparar los ingredientes. Cortar las tortillas de maíz en triángulos. Poner los triángulos en una fuente o bandeja del horno, poner aceite, remover y meter a 200 grados 10 minutos, ir moviendo. Cortar los tomates, la cebolla, el pepinillo y la punta de la guindilla. Poner todo en la batidora: mascarpone, exprimir el zumo del limón, aguacate, cebolla, casi todos los Pepinillos, casi todo el tomate cherry, y la punta del la guindilla. Triturar y añadir el el aceite y la sal. Añadir los tomates y pepinillo y batido bien. Sacar los nachos del horno. Servir la crema de aguacate y queso. Encima poner los tomates cortados y pepinillo reservado. Añadir pimientas molidas y un poco de perejil picado. Home pickled beets (second picture) are on of my favorite sweet/tangy additions. They are so simple to make. PICKLED BEETS Steam or boil beets till desired tenderness. Move to sealable container and add balsamic vinegar Approximately 1-2 tablespoons per beet (to your desired sweetness). Let sit over night. Save this to bring out the basic in you!

Waffles:
1/4 cup Kodiak Flapjack and Waffle Mix Pumpkin Flax
1 scoop Level-1 Pumpkin Spice Latte
1/4 cup Cashew Milk

Mix all ingredients together and cook in waffle maker!

To be extra, I topped mine with pumpkin spice granola, cinnamon, and some Reddi Whip!
